Grilled chicken or beef, refried beans, cheddar cheese, diced tomatoes, olives sautéed peppers and onions, flour tortillas, Spanish Rice, chips, corn salsa and sour cream.

Trio Salad Buffet
Fresh rolls and choice of three salads: Asian Chicken Salad, Caesar Salad, Cobb Salad, Pasta Salad, Pea Salad, Spinach Salad.

Focaccia Wheel Sandwich Buffet
Stacked deli sandwich with turkey, ham, roast beef, lettuce, tomato, red onion, and cheese. The giant focaccia wheel is served with Caesar salad, choice of penne pasta salad or red potato salad, seasonal fruit display, and freshly baked brownies.

Lasagna
Vegetarian or beef lasagna filled with goat and ricotta cheeses, Caesar salad, bread sticks and butter.

Grilled Teryaki Chicken
Teriyaki chicken breasts with sautéed vegetables and sesame ginger rice served with Caesar salad.

Taco Salad
Individually prepared tortilla bowl, lettuce, tomato, refried beans with a choice of chicken or beef toppings. This salad is served with Spanish rice and black bean salsa.

Fettuccini Ricardo
Artichoke hearts, sun dried tomatoes, pine nuts, garlic, kalamata olives, mushrooms and scallions sautéed in herbed vermouth soy butter tossed with fettucini.

Fettuccini Mariscos
Peruvian fettuccini with shrimp and scallops in a saffron cream sauce with tomatoes.

Seafood Paella
Mussels, Pacific Clams, andouille sausage and fresh vegetables accompanied by corn bread and garden salad.

Arroz con Pollo
Slow roasted traditional Peruvian bone-in chicken with rich tomato sauce over yellow rice with peas and carrots.

Cedar Plank Salmon
Pacific salmon slow roasted on a cedar plank with baby bokchoy & sautéed shitake mushrooms over tomato sauce.
